Vegan Protein Rice Crispy Treats
I used to love marshmallows when I was little; then I learned what gelatin is. Plus, let's be honest, marshmallows are basically a sugar pillow. Delicious but not great for you. Well this recipe may not be great for you, but it is made with vegan marshmallows and gluten-free, and I snuck in some vegan protein powder, so there's at least some nutrition. Maybe don't go crazy with this recipe (I mean, you do you!), but if you're reaching for a dessert this holiday season, this is a waay better option than traditional butter and sugar-packed Rice Crispy treats. And my version has chocolate. Yaas.


Maiah's Chocolate Crispy Treats
yields 9
Ingredients:
1/2 bag vegan marshmallows (4.5 oz)
2-1/2 cups organic chocolate rice cereal
2 tbsp coconut oil
1/2 to 1 scoop Orgain Vegan Chocolate Protein powder (you can try other brands but this is the only one I've found that has a perfect texture in this recipe)
Directions:
1. In a large bowl, microwave vegan marshmallows with coconut oil, stopping every 30 seconds until melted.
2. Stir in rice cereal and protein powder. Add a little water or extra oil if needed.
3. Press into 8" pan greased with coconut oil and chill.
While it is chilling, bust out a 5-minute standing ab workout vid. No harm there!
4. Once set (15 min-1 hour, the longer, the firmer it will be), cut into 9 squares and enjoy the heck out of them.
