GF Sugar-Free Banana Bread

Yes, my previous paleo banana recipe is baller, but this easy one-bowl recipe is great, too. There's no sugar, only two bananas, no dairy, no gluten and yet the end result is fluffy, filling and everything you'd want in a banana bread. Throw in the optional chocolate chips for more of a treat, or omit them to keep it sugar-free. You even can slice it thin and use it like the world's best toast.

This banana bread, toasted, topped with almond butter and sliced bananas is crazy-good, filling and nutritious. Make French Toast out of it, a sandwich, avo toast; you name is, it's a great base or stand alone bread.

It's also easily frozen; simple store in an airtight container once it is fully cooled, then thaw when you are ready to eat.

I'm not sure about you but my body loves things like gluten-free breads and oatmeals and smoothies when I'm recovering from illness, so this recipe fits the bill. And since colds and flus pass from one family member to another without pause, a giant loaf to soothe a sick family is perfect.

Alright, now onto this recipe I've been raving over:

GF Sugar-Free Banana Bread

Yields 12-16 thin slices


2 room-temp free range eggs

1/3 cup melted and slightly cooled coconut oil

1/4 TBSP coconut yogurt

1 tsp pure organic vanilla extract

2 mashed bananas (about one cup)

1-3/4 cup gluten-free flour

1 tsp cinnamon

1/8 tsp nutmeg

1 tsp baking soda

sprinkle of sea salt

opt: 1/4 cup vegan chocolate chips or vegan sugar-free chocolate chips

1. Line a 9X5" loaf pan with parchment paper and spritz with avocado oil.

2. In a large bowl, whisk eggs with oil until creamy and add in nondairy yogurt followed by vanilla.

3. Mash bananas well and stir in until smooth as possible.

4. Add dry ingredients and stir well; fold in chocolate chips if using.

5. Bake at 350F on the middle oven rack for 45 minutes or until an inserted toothpick comes out clean.
