'Tis pumpkin season and I'm loving it!
Pumpkin season aka autumn makes me do happy dances and add pumpkin into literally every dish (except soup, I'm still not a pumpkin soup person). But pumpkin in cookies, baked goods, salads and toasted seed mixes? Yes, please!
I can attest that these make a great Halloween breakfast before a run or dance class. Very specific I know, but this cookies-and-workout combo guarantee it will make for a great morning! (Space out said cookies and workout though, nobody wants a tummy ache especially on Halloween).
Below is a home pointe workout for newish dancers on pointe or those that want an beginning but still rewarding strengthening class. (Or twin moms coming back to pointe after a 15 year hiatus, ha). I love this lady's classes and advice for dancers:
Pumpkin Fitness Cookies
1 1/4 cup pumpkin puree
2/3 cup almond butter
1/3 cup cacao powder
1/2 tsp pure vanilla extract
1/4 tsp salt
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp organic apple pie spice
1/4 cup organic coconut sugar
*Note: Sunflower seed butter, peanut butter or or pumpkin seed butter can be used if desired/needed.
**You may use unsweetened cocoa powder instead of cacao for a less-rich option.
1. Warm almond butter then combine all of the ingredients in a large bowl, stir until completely smooth, and then divide onto cookie sheets.
2. Chill batter 15-30 minutes, then heat oven to 350F. Line two cookie sheets with parchment paper.
3. Bake 20-25 minutes. They may seem undercooked when you take them out but let cool, loosely cover with a paper towel and refrigerate overnight, to firm but not lose the fantastic texture.
4. Refrigerate leftovers for 2-3 days.
Mix the above until thick and creamy and frost cookies!
