The Best Way to Bribe Your Children
I'm not above bribing my kids, and chances are if you have toddlers you aren't either. This is one of my best "hacks" to date: make these grain-free healthy protein "donuts", and let your toddlers frost them with my uber-healthy frosting swap, and sprinkle on plant-based sprinkles and/or edible flower petals.
They will listen to you the rest of the day, because they will think they got away with dessert for breakfast. Ha! Suckers.
These "donuts" are baked, not fried, and optionally contain no added sugar! The best is that they are packed with plant-based protein, and will keep your little ones full and energized without a sugar rush. Plus, it's kinda like an art activity: if your littles are like mine, they will painstakingly frost and decorate their little donuts like it's the greatest moment of their little lives.
Vanilla Protein "Donut" Recipe
Yields 6 fluffy donuts
1/3 cup coconut flour
2 tsp baking powder
dash of sea salt
1/2 cup unsweetened vanilla almond or other plant milk
1 free-range egg
2-1/2 TBSP unsweetened applesauce
1-1/2 TBSP coconut palm sugar (optional)
1/2 tsp pure vanilla extract
1 scoop (30g) Vegan Vanilla Protein Powder
water, added until creamy frosting texture is reached
1. Spritz silicone pan with almond oil. Silicone is the best for donuts; otherwise you'll always get a little stuck behind, and the metal pan are a pain to clean.
2. Heat oven to 325F.
3. In a medium bowl, whisk the wet ingredients well. In a small bowl, stir the dry ingredients together. Whisk well together until no lumps remain.
4. Divide into donut pan and bake about 10-15 minutes or until an inserted toothpick comes out clean.
These donuts are less than 100 calories each and contain 7g of protein each! Go ahead, have a few ;)
