Raw Coconut Almond Bites

I concocted these recipes while traveling; I was not in my own kitchen, and had limited options. Lucky for you (and me) these took only a few minutes and JUST one bowl. They are an easy, casual cookie, so if you don't have measuring cups, just eyeball it; it'll still taste delicious. This is a paleo recipe and can be easily vegan if you swap out the raw honey for pure maple syrup.

Extra good news: they are grain-free, loved by toddlers too, and a great way to power you through a fun new workout in an exciting new setting!

Raw Coconut Almond Bites:

Ingredients:

3/4 cup finely shredded unsweetened coconut

1/2 cup almond butter

1/3 cup coconut flour

1/4 cup raw honey

1 tbsp chia seeds

1 tsp vanilla extract

optional: 1/4 tsp dried rosemary

Directions:

1. Roll into 12-14 balls and then roll each ball in additional coconut.

2. Chill for 10 minutes to firm up slightly and enjoy!
