Paleo Pumpkin Pie Bars (& Pointe)

These are so good that one of my three year-olds requested some for breakfast...then ate mine too. Then she tried to hide some in her cheeks for later, which is a recent cute but disconcerting development.

Basically, my point is these are amazing and still full of plant-based yumminess and you may just find yourself squirreling away some for later.

These bars contain no grain, refined sugar or dairy yet taste like a traditional pumpkin pie dessert.

Paleo Pumpkin Pie Bars

Yields 12



1/4 cup coconut oil, melted and slightly cooled

1/4 cup organic coconut sugar

1 flax "egg" or vegan egg of choice

3/4 tsp pure vanilla extract

1 cup super fine almond flour (I prefer this one for baking; it's so soft and fluffy, you'd never know it was gluten-free!)

2 TBSP organic coconut flour

1/4 tsp baking soda

pinch of sea salt


1 carton or can of organic pumpkin puree (I use pumpkin year-round, so I stock up on these easily stackable organic pumpkin cartons for a great price).

1/4 cup maple syrup

1/4 cup organic coconut sugar

1/4 cup unsweetened almond milk

3 TBSP arrowroot powder

1 tsp cinnamon

1/2 tsp ginger

1/4 tsp nutmeg

sprinkle of sea salt

Optional Topping:

sprinkle or arrowroot powder (this one has great value and is tested to be gluten-free) or organic powdered sugar

Tip: use a sifter to have a more delicate "sugar" look. I used my hands and just dumped some on, but I wish I had taken time to find my fine sifter!

1. Line an 8" pan with parchment paper and heat the oven to 350F.

2. Mix the crust ingredients in a food processor until it comes together; press dough into pan and bake 8-9 minutes or until risen and golden.

3. Puree all filling ingredients together, and pour on top of cooled crust. Bake another 40-50 minutes or until not very jiggly; let cool at room temp then fully cool in fridge 3-6 hours or until firm.

Whip these up while you're practicing a little ballet, yoga or HIIT session and treat yourself to something that will nourish, energize and still SATISFY you (and your sweet tooth).

Note: take real classes and get your ankles and feet strengthened (and get permission) before attempting pointe. You don't want to injure yourself, but if you want to try pointe shoes, you most likely can with practice and a teacher's guidance.
