Mini Chocolate Protein Balls

These little bites have only a few ingredients and take mere minutes to make but seem decadent and fancy (my secret: add a little Icelandic flaked sea salt atop almost any dessert to add a level of professional baker vibe. Try it!)

This is a sort and sweet post (pun intended), so it's just a recipe for you, though I have posted to the ingredients and kitchen tools I love the most. For more must have plant-based cooking and baking necessities, check my collection here.



Mini Chocolate Protein Balls:

Yields 18 or so bite-sized balls


Ingredients:


1 cup finely ground almond flour

¼ cup+ 1 TBSP maple syrup

¼ cup creamy almond butter

½ tsp pure vanilla extract

¼ tsp cinnamon

optional: 1 TBSP hemp (or other) protein powder


Topping:


1/3 cup vegan soy-free chocolate chips

1-1/2 tsp coconut oil

Sea salt flakes


Directions:


1. In a big bowl, stir all the ingredients together (except for chocolate chips and oil)

2. Roll dough into 15-20 bite sized balls, and chill in the fridge for 15-30 min.

3. Melt chocolate and little bit of oil in a double broiler or via microwave, carefully stirring and not letting burn. Top melted chocolate on the little protein bites, and chill again for 5 min, then top with flaked sea salt.
