Berry Bread & Blue Matcha 101
No preamble. No long rambling anecdote for you to scroll through. Today it's just a yummy, energizing recipe great for active toddlers and vegan athletes and brunchers alike. You can top this fluffy plant-based bread with vegan protein frosting (3 TBSP non-gritty plant-based protein powder whisked with water until creamy), or almond milk vanilla pudding. Swirl in butterfly pea powder for extra deliciousness and nutrients!
It's easy, it's fluffy and it's everything you want in a light berry bread but without the gluten.
This is an absolutely perfect post-run treat or toddler teatime snack. (Or let's be honest, paired with a mimosa!) Whip it up; it's fast and easy, I promise.
Vegan Almond Berry Bread Yields 1 loaf
2 cups gluten-free oat flour 5 TBSP sucanat or coconut sugar 1 scoop Immunity Superfood Boost (optional) 1 TBSP baking powder (corn-free) sprinkle of sea salt 6 TBSP creamy almond butter 1 cup almond milk (unsweetened) 1 vegan egg substitute (chia "egg" or flax "egg") 1/2 tsp almond extract 1/3 cup frozen mixed berries
***nut-free version: use coconut milk, sunflower seed butter and vanilla extract instead of the almond items above***
1. Preheat oven to 350F and line a loaf pan with parchment paper. 2. Whisk dry ingredients together, then add wet to dry. 3. Spoon a little batter into the pan, swirl in the berries and top with the rest of the batter. 4. Bake 35-45 minutes (depends on size of pan used) or until an inserted toothpick comes out clean. 5. Cool on wire rack, then swirl 1 tsp butterfly pea powder into almond milk pudding (homemade or you can find some at natural grocery stores) or vegan protein powder mixed with water and top as desired.
