Blueberry Bliss Balls

If this recipe seems familiar to you, then it's simply because it's a recreation of my Pumpkin Seed No-Bake Balls, but this time with tiny apple-sweetened wild blueberries (which may just be my new favorite thing), the omission of oats and addition of extra hemp seeds. Basically, a treat that's guaranteed to keep you energized and powered through almost any workout. Or regular day of the week ;)

 

 

These little flavor-packed berries are the subject of many studies and research revealing and proving

 

antioxidants

brain benefits

gut health

heart health

urinary tract health

metabolism boosts

 

and more! (They are also way more flavorful than your average blueberry).

 

 

If you've only had regular blueberries (those bigger milder ones) give the wild ones a try. You can buy the dried ones here or find frozen ones in your supermarket's freezer section).

 

Blueberry Bliss Balls
Yields 14

 

Ingredients:

1/4 cup + 2 TBSP almond butter
3 TBSP pure maple syrup
dash sea salt
1/4 cup coarsely ground almonds
1/4 cup pumpkin seeds

1/2 cup unsweetened coconut flakes (I used fine-shred)
1/2 cup hemp hearts
1/2 cup sunflower seeds
1 TBSP pure hemp protein powder or vegan powder of choice
2 TBSP chia seeds
1/4 cup dried wild blueberries, unsweet or apple-sweetened blueberries

water, if needed 

Directions:

1.  Melt nut butter and syrup (optional) over medium heat in a medium pot (This a great affordable stainless steel one; use a wooden spoon to prevent scratching).
2.  Stir in all remaining ingredients, and roll into little balls.  (Add water or more maple syrup as needed for the dough to hold together before dividing into little balls).  If desired, roll in additional hemp seeds.

3. Chill to set, and serve! Store extras in the fridge for up to 5-7 days.

 

Wild blueberries are another superfood, though one that doesn't get as much attention as say a goji berry.

 

Goji berries have their place in some pretty amazing recipes like Goji-Topped Nice Cream and as an aded boost to these Paleo Macaroons but don't forget about the powerfully nutritious and sweet wild blueberry,

 

 

 

Wild Blueberries benefit the outside of your body, too; like many other superfoods, it's been showing up in everything from face masks to mascara.
