Okay, so maybe these are not technically a donut since they are not fried, but they are dang good, and good for you. Almond flour packs in the protein (as well as a lovely texture), and banana adds the sweetness and banana-cake flavor. With a little melted chocolate on top and maybe some plant-based sprinkles, you'd never know that these are much healthier than a regular donut, and that they are (gasp) gluten-free and dairy-free!
Dig in with no guilt, and enjoy as a treat or even breakfast. (And, these will make an excellent bribe fo children, IMO).
Best Ever Baked Banana Donuts
Yields 20 smallish-med donuts
2 mashed bananas
2 eggs or vegan egg alternative like "neat egg"
1/3 cup unsweetened vanilla almond milk (or oat milk)
1/2 tsp vanilla extract
2 TBSP oil (avocado, olive or coconut are all fab)
2 TBSP pure maple syrup
1 cup almond flour, super fine*
1 cup gluten-free flour
1/2 cup coconut palm sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp sea salt
optional: vegan chocolate chips or chocolate broken into pieces (I love rice milk chocolate without dairy or soy!)
1. Preheat oven to 350 F.
2. Spritz two silicone donut pans with nonstick spray (silicone donut pans are the BEST--metal pans will get scratched and bake unevenly, but silicone will give you the most even baking, and the easiest clean-up).
3. Whisk wet ingredients, and sift in the dry, Bake 11 min or until an inserted toothpick comes out mostly clean.
4. Let cool, melt chocolate and drizzle on top, optionally sprinkling on some sprinkles for an extra festive touch.
*with almond flour, the finer the better, as it well lend an extra fluffiness to the texture.
**for vegan option, use neat egg or a similar brand and follow the directions to replace eggs in any baked good
