Banana Blondies

I only ever heard of blondies a few years ago and since then I'm made versions somewhat regularly. (Mostly though, just because I've run out of cacao powder and can't make brownies).

These though, are a new favorite. You guys, the texture. It melts in your mouth, and contains plant-based protein and is sweetened by banana. Best of all, it's fast and easy and ready from start to finish in about 20 minutes or so. Stock up on these ingredients stat, because it's Prime Day and they are on sale!

I made these when I was super sore after an Orange Theory class and wanted a treat. And then promptly signed up for a Studio Barre membership because that's more my jam!

grain-free vegan blondies

Banana Blondies

Yields 12-16 little ones


1-1/2 bananas, mashed (about 1/2 cup)

2.5 TBSP coconut oil (melted)

1 TBSP coconut sugar (optional)

1 tsp pure vanilla extract

1-1/2 cup fine almond flour (You NEED this ultra fine one for the perfect texture though others will work...just won't have that amazing crumb).

2 TBSP plant-based protein powder

1/2 tsp baking soda

1/8 tsp sea salt

1/4 cup mini nondairy chocolate chips (optional)


1. Line an 8" pan with parchment paper.

2. Whisk all wet ingredients together, then fold in dry. Stir chocolate chips in last, saving a few to sprinkle on top.

3. Bake 14-18 minutes or until slightly firm and golden brown at edges. Let cool at least 10 minutes before slicing.

Now I'm dreaming about crushing a few more after a barre class and day on the beach. Perfection!
