Pumpkin Seed No-Bake Balls

This recipe is no-bake plant-based super cookie recipe is fast and easy and tastes amazing.  The only problem I have is resisting eating all of them in one go, and I have to make a very conscious effort to ask myself if I'm really hungry (and sometimes after a long run or busy day I do need a few!) They test my willpower for sure though, meaning they are truly tasty

 

Freeze some for an icy treat or keep in the fridge to stay firm...but good luck storing them more than a couple days.  This may be my absolute best treat ever! Get ready to get up and goji ;)

 

 

Little note about the ingredients: these are chock-full of nutritional and pharmaceutical functions, these "superfood"/functional foods in this cookie may help you reap fantastic health benefits.  Antioxidants found in foods such as goji berries, pumpkin seeds, sunflower seeds, hemp, chia, oats and even maple syrup prevent damage to your health.  They are often anti-inflammatory and stop free radicals that cause breaks in the DNA chain, and may be preventative in stopping diseases and cancers in the body.  Load up on fresh fruits, veggies, nuts if you're not allergic, and seeds, legumes and whole grains to give your body the nutrition it needs!

 

 

Pumpkin Seed No-Bake Balls
Yields 14

 

Ingredients:

1/4 cup + 2 TBSP sunflower seed butter or any nut butter
3 TBSP pure maple syrup
dash sea salt
1/2 cup gluten-free oats
1/4 cup pumpkin seeds
1/4 cup hemp hearts
1/2 cup sunflower seeds
1 TBSP pure hemp protein powder or vegan powder of choice
2 TBSP ground chia seeds
1/4 cup raw organic goji berries

Directions:

1.  Melt sunflower seed butter and syrup (optional) over medium heat in a medium pot (I'll link to my fave high quality stainless steel one; use a wooden spoon to prevent scratching).
2.  Stir in all remaining ingredients, and roll into little balls.  (Add water or more maple syrup as needed for the dough to hold together before dividing into little balls).  Chill to set, and serve!

Goji berry-infused organic makeup:

I prefer water-based natural looking foundation, and this one smells nice and has great ingredients, while still having good coverage (but it won't highlight fine lines like thicker or cream foundations do)

Goji berry-infused Smashbox Cheek Tint:

This light and glowing cheek stain adds a light color. The goji-berries and other natural ingredients moisturize skin and adds a gentle vibrancy. Love it!
