Pumpkin Gingerbread & 5 Fab Gifts

I know I have the best gifts ever for your fitness pals in my past post, but what about friends and family that aren't runners? Read below for the 5 gifts anyone will enjoy.

Number 1 is to bake off mini loafs of my fantastic gluten-free pumpkin gingerbread, wrap it nicely, and adorn it with ribbon and include the recipe on a little card. It's certain to brighten every holiday, including yours!

 

1. Pumpkin Gingerbread

Yields 1 regular sized loaf or 3-4 mini ones.

 

Ingredients:

Bread:

1 cup pumpkin puree

3 tablespoons pure maple syrup

3 to 4 TBSP coconut palm sugar

1/3 cup coconut oil, melted

1/4 cup molasses

1 egg or chia "egg" (1 TBSP chia seeds + 3 TBSP water)

1 cup finely ground gluten-free oats

2/3 cup gluten-free all-purpose flour or almond flour

1 teaspoon baking soda

1 teaspoon baking powder

3/4 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon nutmeg

1/4 teaspoon cardamom

1/8 teaspoon allspice

1/8 teaspoon sea salt

 

Crumb Topping:

1/4 cup gluten-free oats

3 tablespoons pumpkin seeds

3 tablespoons gluten-free all purpose flour or finely ground oats

1 to 2 tablespoons pure maple syrup

1-1/2 tablespoon coconut oil (not soft)

1 teaspoon cinnamon

 

Directions:

1.  Grease 4 mini loaf pans or one regular-sized loaf pan with coconut oil or line with parchment paper.

2.  Whisk wet ingredients together; set aside.  Stir dry ingredients into wet, and fold mixture into prepared pans/pan.

3.  In a small bowl, use your hands to mix the topping together well, and sprinkle on top of the batter.

4.  For mini pans, bake 20-30 minutes (mine were done at about 26), or with one larger pan, bake around 45-55 minutes (check after 30; everyone's oven varies and when this recipe is over-baked it is too dry and not nearly as yummy). Use the toothpick method to see if it is done (if it comes our clean).

5. Set on the wire rack to cool they slice and serve and share with your loved ones!
