Healthy Popsicles

Nothing says summer like babies in diapers with rivulets of melted popsicle down their bellies and smeared across their sticky sweet faces.

These easy creamy fruit treats have no added sugar and will be enjoyed by kids and adults alike. The bonus is the prep time takes about 5 minutes, and all you have to do is wait for them to freeze and then, instant treat!

 

Fruit Popsicles:

Yields about 6

 

Ingredients:

1/2 can organic coconut milk

handful ice cubes

1/2 cup frozen cherries

1 banana

1/2 cup frozen blueberries or strawberries

Handful spinach

 

Directions:

1. Puree all ingredients in a blender or food processor, adding any frozen fruit desired, and adding more coconut milk or water if needed (if mixture is too thick). 

2. Pour mixture into popsicle molds and wait until frozen.

3. IMPORTANT. Run warm water over the mold before pulling out by the sticks, otherwise you'll BREAK OFF the handle. When the girls were crying, I hastily broke two of our popsicle holders in my frantic hurry to soothe them with a yummy healthy treat. Learn from my mistake.

 

These popsicle molds are the BEST. They catch a lot of drips and come out of the mold fairly easy, and are a cinch to quickly clean.

This one comes with cleaning accessories and more easy recipes in a booklet. The stand is nice, and these handles catch messes a little more than traditional sticks–though be warned, popsicles are an outdoor treat or a treat to be enjoyed when buckled into the high chair. The most fun popsicle mold:

These are also easier to pull out as they are made of silicone. They are fun safari characters and animals and are easy to clean.  No need to run under warm water to remove or carefully wriggle free; a huge plus! 

 

The 7 Minute Quick Popsicle:

I'm dying to try this one. They come in singles or trios, and create frozen popsicles in as little as 7 minutes. My friend with one confirms they actually work. This would be ideal for hot days when I want my girls to enjoy a healthy smoothie or green juice–I could literally pour an avocado cucumber smoothie in, freeze it and hand it to my girls to lick. In fact, I think I just talked myself into buying yet another popsicle mold...

 

 If you give a toddler a popsicle...you gotta watch your neck!
