Glow Green Smoothie

Not only is this considered a slimming smoothie (cucumber does wonders for your body), it's also tasty, refreshing and simple. No weird powders or hard-to-find ingredients here: just plain, vibrant veg and a tiny bit of fruit.

 

I'm going to get right to the recipe because all that blah-blah gets old. But after you whip up this glorious elixir, take a peek at the smoothie cheat sheets I've collected below. These are fantastic for when you want an easy fast meal, or have tons of frozen fruit to get rid of, or those moments when you want a thick creamy smoothie but can't figure out what exactly to put in it. I'll solved all of these problems and more, so take a look.

 

 

Glow Green Smoothie

Serves 1

 

Ingredients:

1/2 large cucumber, peeled

1/2 pear 

1 heaping cup of spinach

1 tablespoon fresh lemon juice

4 mint leaves

3/4 cup almond or coconut milk

handful of ice cubes


It should look like this:

 

Directions: 

1. Blend in a quality blender. (You don't what ice shards, just a medium-thickness perfectly blending fresh green drink). I like this one that does single or double serving smoothies fast and seamlessly. (And is easy to clean)

2. ENJOY!

 

Note 1: An alternate option to fresh lemon juice is a lemon juice you can store in the fridge and bust out for when you quickly need lemon juice and your only lemon in the fridge is hard, brown and shriveled (there's always one of those in the back of my crisper). So it doesn't have to be juiced-that-minute fresh.

 

Note 2: this recipe is based on the Super Green Smoothie (my version is a lighter, less sweet, less fat one) by Dorothy Calimeris and Sondi Bruner. Both recipes are GREAT though and if you're looking for easy, delicious plant-based recipes, I recommend their cookbook, The Anti-Inflammatory Diet & Action Plans. It one of my only 2 cookbooks right now (the other one is Vegan Cupcakes Take Over the World!, a vegan baker's necessity) and I'm loving the simple, nutritious and filling concoctions. They even have laid out whole meal plans to heal inflammation if you're so inclined. 

I skip the meat recipes, but if you're paleo, then you'll love it too.
