Matcha Donuts for Daaaays
Matcha lends a wonderful color and flavor to these delicate baked donuts, which are (as always) gluten-free and vegan. These make a great afternoon pick-me-up with a cup of iced or hot tea! #yum

Matcha Donuts
Yields 6
Ingredients:
For Donuts:
1/2 cup vegan vanilla protein powder
1/2 cup gluten-free oat flour
1 tsp baking powder
1 tsp matcha powder
pinch of sea salt
1/4 cup unsweetened coconut milk
3 or 4 TBSP pure maple syrup
1 vegan egg (or chia egg/other will work too!)
1 tsp pure vanilla extract
1 TBSP avocado oil (or melted coconut oil)
coconut oil spray, for pan

For Glaze:
3/4 cup unsweetened coconut yogurt
2 TBSP vegan vanilla protein powder
3/4 tsp matcha
Directions:
1. Preheat oven to 350F and grease donut tin with avocado oil or high-heat-safe oil of choice.
2. Sift the dry ingredients together, then stir the wet ingredients into the dry.
3. Bake for 10-15 minutes or until an inserted toothpick comes out clean.
4. Let pan cool on a wire rack, then glaze and ENJOY!


Matcha is very versatile, vibrantly green, and wonderfully good for you. It's nutritious as well and has a whole host of great benefits, such as antioxidants and offers a great boost of energy.
