First, I gotta say a big thanks to Philosophie Love for the Cacao Magic superfood mix that I used in this recipe. 2 extra tablespoons of carob/cocoa/cacao may be used in place of the Cacao Magic mix but I love those extra yummy nutrients.
This recipe is SO fast, and will firm up in about in hour. Best of all, it's thick and creamy and super filling, so very hard to over-indulge (whew!) Also, it tastes extra good after killing it at a Sh'Bam class. I know, I know, dumb name. But really fun! It's a dance class my gym offers, which is similar to a Zumba/hip hop combo class. If you don't have access to a gym that offers it, pop in one of these DVDs; you can burn 500+ calories a class if you go full out. And I go full out! I'm that annoying person front and center who pretends they are the star of the dance team. That makes it extra fun, I swear ;)
Paleo Superfood Fudge
Yields 9 thick squares or 12-15 thin ones
1/2 cup unsalted and unsweetened almond butter
3 TBSP coconut oil
2 TBSP Philosophie Love Cacao Magic (or cocoa powder)
1 TBSP toasted carob powder
2 TBSP pure maple syrup
1/2 tsp pure vanilla extract
sprinkle sea salt
1. Heat coconut oil and almond butter until the coconut oil is melted and the almond butter is soft.
2. Puree all ingredients in a food processor until smooth and creamy.
3. Line a small to regular-sized loaf pan with parchment paper and spread mixture. Chill in the freezer for at least an hour and cut and serve. Enjoy or store remainder in freezer (will melt quickly).
Optionally sprinkle with hemp seeds and rose petals for a fancy touch!
