Pomegranate Cookies

These are another one of my fast, one bowl easy cookies with a fun, autumn-esque addition: Pomegranates! Pom-poms are not only little jewels of pretty vibrance, but they are full of antioxidants, fiber, vitamins and yes, even protein. It's also technically a berry, which I only recently learned. Sure they can be a pain to get all the little seeds out (unless you purchase a Pomegranate De-Seeder; it's a real thing!), but their taste and health profile is totally worth it! These cookies also make the perfect addition to a smoothie or smoothie bowl full of pomegranate, spinach, banana and vegan protein powder (I recommend vanilla bean for this combo!)

In addition to noshing on pomegranates, organic pomegranate seed oil is super nourishing for skin, hands and nails. It has been said to help generate cell renewal and improve skin's elasticity, which in turn diminishes fine lines and wrinkles. It has also been scientifically proven to be anti-inflamatory, which is a huge health benefit! 1

You can also sip on pomegranate tea; this one has an incredible flavor and also packs in tons of antioxidants!

Pomegranate Cookies

Paleo, Vegan, Grain-Free

Yields 12 small cookies

Ingredients:

3/4 cup almond flour

1/4 cup green banana flour

1/4 cup maple syrup

2 TBSP soft coconut oil

1/2 tsp vanilla powder

1/8 tsp baking soda

sprinkle sea salt

1/4 cup pomegranate

Directions:

1. Stir all ingredients in one bowl, adding pomegranate arils last.

2. Chill dough for 10-15 min in the fridge.

3. Divide into 10-12 small cookies on a parchment paper-lined cookie sheets and bake 8-10 minutes. Let cool completely and store chilled to stay firm.

These made a great take-along to a recent fall festival. The girls loved them and they are a perfect snack after trekking through a pumpkin patch!
