Paleo Baked Nutmeg Donuts

Eating like a caveman (or with lots of food sensitivities) doesn't mean you need to forgo sweet treats (hurrah!). This filling fluffy "donut" recipe is baked, delicious and much more protein packed and nutritious than they look (or taste!)

Pre-workout donut? Yep, it's now a thing! Fuel up before a workout with healthy carbs in this easy to digest treat. Get that energy-boost and stabilize your blood sugar with the spices these sweet treats contain.

Enjoy one or two an hour to 45 minutes before a barre sesh or jog to feel great and power you through your workout! Of course, enjoy them for breakfast or just for an everyday snack with your lion buddy!

I recommend this donut pan since they come out really easy and can be popped into the dishwasher for simple clean-up.

Paleo Baked Nutmeg Donuts

yields 8-10


3/4 cup organic coconut flour

3/4 tsp baking soda

1/4 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp sea salt

4 eggs or vegan egg replacement

1/4 cup coconut oil

2 tbsp creamy almond butter

1/3 cup pure maple syrup

1 tsp pure vanilla extract


1. Preheat oven to 350 and spritz a donut baking pan with avocado nonstick spray or coconut oil. (Even most coconut oil spray contains soy as a propellant; I love this avocado oil cooking spray because it is 100% avocado only. You can also rub coconut oil in the pan but be warned, they get stuck in the pan more!)

2. In a blender or food processor, whir eggs, vanilla and maple syrup. Add in melted oil and maple syrup.

3. Pour wet mixture in a bowl and whisk in dry ingredients. Fill each donut spot 2/3 to 3/4 full and bake 10-14 minutes or until golden and set. Let cool 5 minutes and invert pan onto a wire rack.

4. Optional topping: Mix 1/4 cup Vegan Chocolate Protein Powder like the Orgain one I used and whisk with water until it reaches a desired spreadable consistency and drizzle or spread on top of the donuts. Enjoy warm for best results and eat within 2 days so they don't dry out.
