I promised you this amazing recipe, so of course I cannot disappoint! This is a luscious vegan brownie that vanishes fast; between the twins and I (okay, mostly me), these 9 squares were gone insanely quick. The good news though, is that they are inflammatory and pretty dang good for you; a rarity in a delicious brownie!
Oh and side note: it can be SO hard to find a paleo brownie without nuts that is still vegan. (I dare you to try--it's hard!) So that was my motivation for creating this recipe. I wanted to be able to enjoy it without inflammation or stomach pain (thanks, autoimmune disease!) The good news though is that almost anyone can safely enjoy this recipe. There's not even chocolate in it; it's (gasp) carob. And you cannot even tell!
Nut-Free Vegan Paleo Brownies
Yields 9-12 brownies
2/3 cup cassava flour
1/3 cup arrowroot flour
1/3 cup carob powder
1/2 cup coconut palm sugar
1/2 tsp baking powder (corn-free, aluminum free)
1/4 tsp sea salt
1/2 cup mashed banana (1 medium)
2 tbsp coconut milk
1/4 cup coconut oil (melted) or avocado oil
1/2 tsp pure vanilla extract

1. Preheat the oven to 350 F
2. Line an 8X8" pan with parchment paper and spritz with avocado or coconut oil.
3. Stir together the dry ingredients, and in a separate bowl, whisk the wet together. Mix the wet ingredients into the dry.
4. Bake for 15-22 min or until toothpick comes out clean. (Check it early; it's better slightly soft than dry!)
As I was typing out my recipe (transcribed from my usual barely-legible post-its/scrap papers with measurements and ingredients scratched out and scrawled across it like some secret code), I realized an alternate name for this recipe could be Breakfast Brownies. This sounds like a serious yummy morning option as well!
I like to pack my latest creations in either a glass ware for me, or if it's for the girls, in reusable cute fabric "Ziploc" bags. They love to hold their own bags and pick at pieces of their snack or share with each other. Not only are these bags better for the environment (okay, and super cute), but Ivy cannot eat them, as she often tries to tear away the plastic bag with her teeth. I quickly learned she needs a fabric bag or strong container!
