Carob Gingersnaps

Oh my. These are incredible little discs of heavenly joy. Speaking of um, heaven, if you celebrate Easter or get together with your fam, I recommend these as a tasty treat EVERYONE will enjoy, even if they are gluten-free, vegan, paleo, AIP or all of those.

Even if you don't celebrate the religious aspect of Easter, celebrate spring the healthy way with nourishing foods and gifts that are good for the environment. I'm hoping the twinsies and I make it to church this year, but even if we don't (15 month old twins aren't always on board with my plans), we'll look for hidden Easter eggs around the house and yard.

 

My favorite gifts for the girls this year are eco-friendly reusable items that will give them months of joy.  (J'll admit to giving the girls their Eco Easter Eggs early and they love them! I'm now hiding them until Easter; I figure by then they will likely forget about them) 

 

These Eco Eggs are fantastic and huge, so if you make your cookies small enough you can hide them inside!

 

 

 

 

Carob Gingersnaps

Yields 16 Cookies

 

Ingredients:

 

1 cup cassava flour

1/4 cup carob powder (this toasted one is AIP-friendly with a wonderful flavor)

1 tablespoon lucuma powder

1 tablespoon gelatin (or ground flax meal for vegan)

1 teaspoon ginger

1/2 teaspoon baking soda

1/8 teaspoon sea salt

1/2 cup almond butter

1/3 cup pure maple syrup 

1/3 cup water

3 tablespoons coconut oil, melted

 

optional: raw cacao nibs and turbinado sugar for sprinkling on top (not AIP-friendly)

 

 

Directions:

 

1.  Preheat oven to 350F and line a cookie sheet with a silicone baking mat or parchment paper.

2.  Mix all dry ingredients together, and stir in wet ingredients. Divide into 16 medium cookies, and press raw caaco nibs and coarse sugar into cookies if desired.  Bake for 10 minutes.

3.  Enjoy warm or leftover with coffee or tea!
