Paleo Ginger Cookies

Ginger and Avocado are the perfect partners in health.  First off, ginger is anti-inflammatory, prevents free radicals from forming and is known to soothe stomach and digestive issues: fantastic for those with food sensitivities, delicate stomachs or prone to anxiety (anyone else get stomachaches when you're worried or anxious?  I sure do, and ginger and activated charcoal are my go-to cures for any digestive or stomach issue!)

 

Ginger also lends fabulous flavor to most dishes and smells amazing when in baked goods.  Also, if you are active and workout (and I'm just assuming you do), ginger may relive muscle pain and soreness, which helps recovery time between sweat sessions.

 

Now for the Avocado.  If you are still thinking avocados make you fat, fast forward already please!  The healthy fats are good for you, and can help you lose weight and avocados are especially great for thicker healthier heal, stronger nails, a better complexion and of course, creamy and yummy in recipes.  Not a fan of the texture? Using avocado oil lends a nice delicate flavor without the strong savory taste of olive oil, or the tropical notes of coconut oil.  Plus it is safe for higher temperatures; basically it's perfect for delicate baked goodies. (Though it can be a wee bit expensive.  But if you're going to spend money on something, spend it on nutritious food!) Avocados are a great source of nutrients, fiber and contribute to better cardiovascular health (all of which is backed by science. Valid science).

 

Paleo Ginger Cookies

Yields 1 medium cookies to 1-1/2 dozen small

Prep time: 15 min total 

 

Ingredients:

 

1 cup super fine almond flour*

1/2 cup arrowroot flour

1/4 cup coconut flour

2 teaspoons cinnamon

2 teaspoons ginger

1 teaspoon baking soda

1/4 teaspoon sea salt

2/3 cup pure maple syrup

2 tablespoons avocado oil or olive oil

 

 

 

Directions:

 

1.  Whisk dry ingredients together in a medium bowl.  Pour in maple syrup and oil, stir and chill in the fridge for at least 10 minutes.

2.  Preheat the oven to 325F and line a cookie sheet with a silicone baking mat or parchment paper (I love this ecofriendly/unbleached and safe one that works really well and keeps the cleanup to a minimum!)

3.  Divide batter into 12-18 cookies, roll into balls and press slightly flat and bake for 10-14 minutes or until done and a little cracked.  Enjoy with ginger tea for a digestive calming treat!
