Happy 2017! My New Year gift to you is an AMAZING 5 minute recipe that makes a great pre or post workout treat or breakfast. In fact, any day will start off swimmingly with these little morsels.
These berry bites of heaven are reminiscent of those strawberry shortcake popsicles from long ago. Anyone else have an insane love for those sickeningly sweet fake strawberry ice cream popsicles with a crunchy coating? Well, as a child rarely allowed desserts and ice cream, I sprinted to that neighborhood ice cream truck whenever the first rings of the truck pierced my consciousness while I was reading amongst the tree branches hiding from my little twin brothers, or trying to convince my twin sister to play Barbies with me, which are two frequent occurrences of my childhood.
(I know, my photoshop skills could use a little work...but it's still funny, right??)
I accidentally recreated an even better version of that dessert with my protein-rich vegan Strawberry Shortcake Bites, and I could not be more delighted. I was inspired by a purchase of the gluten-free protein bean cereal Strawberry O's by a family-owned business that I adore, Love Grown. They are a necessity for this recipe; I cannot guarantee any other cereal will taste as good, so just find this one...so worth it! (And no, they did not sponsor or pay me for this; though I wouldn't turn away a new box of O's, hint hint!)
OK without further ado...
Strawberry Shortcake Bites
1 cup Strawberry O's
1/4 cup vegan vanilla protein powder
1/3 cup almond butter or sunflower seed butter
2 or 3 TBSP pure maple syrup
1/4 teaspoon pure vanilla extract
optional: additional 1/4 cup crushed cereal to roll cookie in.
1. Food-process all ingredients and roll cookies in crushed extra cereal. Eat or chill to save for later!
2. Feel like you are indulging in Strawberry Shortcake! Yum!
