Spinach Sweet Potato Waffles

Because, well Waffle Wednesday!  And because my husband bought a ridiculous amount of organic sweet potatoes at Costco so I'm getting creative.  Add that to the fact that the twins love sweet potatoes and they don't always eat their veggies and thus these fab waffles with hidden veg were born.  And the last reason of course is that our new waffle iron plates that are dishwasher friendly are way easier to clean than the Mickey Mouse waffle maker, despite Mickey's inherent cuteness.  So long story long, I made these waffles out of convenience and a way to fuel us all with a healthy breakfast.

Spinach Sweet Potato Pancakes

serves 4

 

Ingredients:

 

1/2 cup cooked sweet potato

1 handful spinach

1 cup gluten-free oats

2 eggs or vegan substitutes

1/2 cup unsweetened almond or coconut milk

1/4 teaspoon baking powder

sprinkle sea salt

 

Optional:

Vegan Pant-Based Vanilla Protein Powder

Superfood Boost Version:

Add 1 tsp maca powder, and 1 tsp turmeric for an anti-inflammatory nutrient boost.

 

Directions:

 

1.  Puree all ingredients in a food processor until smooth.

2.  Preheat waffle iron and spritz with coconut oil.

3.  Cook until done and serve plain or topped with a protein drizzle of vegan protein powder mixed with water.
