This smoothie bowl or "ice cream" has it all: protein, healthy fats, nutrients and creamy fruit goodness. Full of antioxidants and flavor, ripe summer blackberries were pretty much the ideal addition to this creamy bowl. Plus, (not a surprise if you're a fan of my recipes) I snuck in some additional healthy veg in the form of broccoli. Don't fret; you can't taste the broccoli at all, I promise. You'll simply benefit from the hidden protein, fibers and numerous vitamins and minerals.
Also, this one is a breeze to make (as many of my recipes are after having twin babies for obvious reasons). So easy in fact, I'm pretty positive I can talk my hubby or little brothers into whipping this up for me: long story short, I'm in bed for at least a week, and minimal movement for a few weeks after. No running or barre for me for a bit (sigh) but on the plus side, my hernia and ab separation is now fixed and the mending process has begun. In the meantime I'm on "princess duty" and having various family members bringing the girls for me to kiss and sing to, and having nutritious meals served to me, like super green smoothies, fresh salads and mango applesauce that I shared with the babes. So far, healing from surgery isn't the worst thing for a busy twin mom, but also I'm only 24 hours in, so I imagine I'll be having a hard time lying around soon.
On the plus side, I'll have time to edit the recipes and dig up photos from recent food concoctions that I've been too busy to post, so my recovery time is good news for you readers out there who enjoy my healthy treats! Enjoy!
Blackberry Protein Smoothie Bowl:
1 cup frozen blueberries
1 cup frozen banana slices
1/2 cup fresh blackberries
1/2 cup broccoli (steamed and cooled)
1/2 cup coconut or almond milk
2 tablespoons avocado
2 tablespoons sunflower or almond butter
2 teaspoons chia seeds
1. Puree all ingredients in a high speed blender or food processor. Spoon into a bowl, top with additional chia and berries and enjoy!
