Healthy "Kudos" Bars
Something seemed familiar about these bars after I invented them, then it hit me: they look like those Kudos bars that I would sometimes get after soccer games as a kid, when someone else's parents would bring them as a team snack (my parents were all about the healthy stuff like orange slices and apples, of course, for which I am now thankful). Anyway, at the age of about 9 or 10, the days when team parents brought Kudos bars or goldfish crackers to the soccer games were the best. I associate those snacks with the smell of freshly cut grass, rain and sweaty kids: spring soccer at its finest. Anyways, I digress.
The hemp-packed bars are healthy and energizing, and really easy to make. This is particularly helpful when you're trying to either whip something together while your babies are napping, or you really want a sweet treat, or both! Savoring a couple with a cup of tea or coffee is highly recommended, too. Oh, and if you leave the chocolate off, they make an excellent snack to tote along to a short hike or a nice walk along the sea. Be warned though, if you put a couple with the chocolate drizzle in a plastic bag in your sweatshirt pocket and walk in 70 degree weather for half an hour, you'll have a messy but delicious mess of chocolatey hemp pieces to lick out of the bag. (Not that I would have firsthand experience with this or anything...)
Healthy "Kudos" Bar
1/2 cup almonds
1/4 cup hemp hearts (hemp seeds)
1/2 cup unsweetened coconut
2 tablespoons sunflower seed butter
1/2 teaspoon vanilla
optional: 1/4 cup nondairy chocolate chips
1. Food-process all ingredients together then shape into a rectangle on plastic wrap or wax paper. Roll or flatten to make the surface even. Cut into 12 bars.
2. Drizzle melted chocolate chips on top and sprinkle with additional hemp hearts.
3. Chill in the fridge or freezer until set and ready to eat.
