Zucchini Breakfast Cookies

It never fails: take twin babies out, and you'll get a barrage of questions and comments. Granted, I'm sure people with just one baby get comments and odd questions, but from what I have experienced compared to other moms, there's just something about twins that makes strangers feel the need to either ask personal questions, try to guess "which one is the evil twin" or just start listing every set of twins that they have known.

This morning I walked several miles on the bike path, hung out at a coffee shop and took the twins to the grocery store, which is always a treasure trove of comments, looks and questions. Without fail someone will tell me "I look great for having twins" which is nice, but would be nicer if they just said "You look great." But hey, it's better than "You look tired" any day.

Today's comments: A pat on the shoulder and a "Bless you. Oh my. (sigh) Bless you." (and shuffled away looking sad).

A "My daughter-in-law had twins. It's hard work; you're doing great mama!" (I loved this lady).

"Two boys? A boy and a girl? Oh, two girls? Hope they grow some hair, haha!"

"I went to school with a set of twins." (OK...that's nice. You and almost everyone else).

"You must have your hands full/You look like you have your hands full." (My least favorite comment ever; clearly I have my hands full. That's not helpful).

And then, there's the lady who walks up to us, looks in each bassinet on the stroller, doesn't make eye contact with me, just the babies, stands staring for a moment, then lifts her dog up and baby-talks to her dog about the twins as I back us away quickly.

It's entertaining/gratifying at times, weird at other times, and annoying sometimes but hey, I guess in some ways the attention reminds me often of how special my girls are, and I wouldn't trade that for anything. Plus now I know how my mom felt with my twin and I when we were young. But she had it way worse with two sets...

Anyways, about this zucchini. I'm not going to pretend that I'm this cool, put-together mom, as I'm often in the grocery store wearing the same shirt I wore to bed. Today, I realized that I was talking aloud to the girls about the zucchini I was going to buy to "make something yummy for mommy and daddy" way too loud and a man behind me surely heard, so I'm positive he thought I was kinda weird. Especially since one baby was asleep and the other one was sucking on her toy, and definitely not responding to my zucchini comments. But I ended up buying some zucchini and that's all that matters because I ended up inventing a pretty yummy zucchini cookie that I now get to share with you.

Zucchini Breakfast Cookies

Yields 16-18 cookies


1 cup gluten-free flour

1 teaspoon baking soda

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ applesauce

¼ of a banana, mashed

¼ cup sucanat or coconut sugar

3 tbsp xylitol or any sugar

1 egg or chia "egg"

1 teaspoon vanilla

1 medium zucchini, shredded

2 cups gluten-free oats

1. Preheat oven to 350 and line two cookie sheets with parchment paper.

2. Whisk applesauce, sugar, banana, egg, zucchini and vanilla together.

3. Stir in dry ingredients, adding oats last.

4. Bake 10-12 minutes and let cool for 5 minutes on a wire rack
