Strawberry Shortcake Overnight Oats

In an effort to heal my ab separation from pregnancy, I am religiously doing every diastasis recti exercise and following every recovery tip I come across.  As I contemplated what to have for breakfast recently, an idea popped into my head.  What if I eat collagen-boosting food?  Maybe additional collagen will help the connective tissue between my abs spring back.  This may be completely inaccurate, but I figure my connective tissue can get all the help it needs post-birth.  Plus, at the very least, maybe it can help the fine lines around my eyes that seem to have appeared at the same time that I began to sleep in 2-3 hour increments.  (Thanks, babies!)  There's a great article HERE I discovered about collagen, and I especially like that it does not push gelatin; it embraces healthy vegan recovery and collagen addition as well.

 

There are some great options for collagen boosting foods including fish, white tea, orange veggies, citrus fruits, dark green veggies, red veggies and berries.  When I discovered organic strawberries on sale at Whole Foods (finally, strawberry season is beginning to emerge!), I had to indulge.  

 

And because I wanted a complete meal, I began to scheme on how to create a breakfast with complete proteins that would fill me up until lunch time, satisfy my giant sweet tooth, and incorporate collagen-boosting berries.  The result was this Strawberry "Shortcake" Overnight Oats with a chia oat "cake" base topped with protein-powdered strawberry "frosting" and sprinkles  to make it seem a fancy treat.

Strawberry Shortcake Overnight Oats

Serves 1-2

 

Ingredients:

 

1/2 cup gf oats

2 tablespoons vegan vanilla protein powder

3 mashed strawberries

1/4 teaspoon almond extract

1/3 cup unsweetened vanilla coconut milk

1/4 cup unsweetened coconut yogurt

1/4 cup water

1 tablespoon ground chia seeds

sprinkle sea salt (optional)

 

Optional frosting:

2 strawberries

protein powder

 

 


 

 

Directions:

 

Stir and let sit at least 2 hours covered in the fridge.

Optional: For a frosting layer, mash 2 strawberries with additional protein powder.  Sprinkle with gluten-free vegan organic sprinkles, and top with additional strawberries.
