This is so easy, you can make it while holding a baby! I used leftover sweet potato that I had previously prepared, and this is the ridiculously lazy way I did it: I pricked a medium sweet potato with a fork, microwaved it for 4 minutes, let it cool slightly and mashed it with a dollop of coconut oil and a generous heaping of cinnamon. In this pancake recipe, I used a 1/2 cup of the mashed sweet potato and threw together this recipe:
Sweet Potato Pancakes
yields 6 small ones (serves 1-2)
1/2 cup mashed cooked sweet potato
2 eggs or 4 egg whites
1 scoop vegan protein powder (optional)
1 teaspoon baking powder (corn-free)
1/2 teaspoon cinnamon (use more if your potato is plain)
1 scoop vegan vanilla protein powder (I used Orgain Vanilla Bean), water and cinnamon to taste.
Puree in a food processor, and cook in a nonstick pan over medium heat, about 3 minutes per side.
Serve plain or with additional protein powder whisked with water and cinnamon and drizzle on top!
