Supermom Superfood Cookies
You know when you do something amazing, like get your newborn twins to fall asleep on cue so you can whip up fantastically perfect raw cookies and you feel like a superhero? Well, I can't believe I'm saying this, but I do! Well for today, at least. I lulled the girls asleep by strolling them around the block a few times, then gently and carefully eased them into the house where I quietly played in the kitchen with a new find: Jem Raw Organic Superfruit Maqui Camu sprouted almond butter. After a little trial and error, this wonderful cookie was created and I must saw, it is one protein-packed nutrient-rich energizing treat! Just don't eat half the batch at once. Not that I know anyone that would do that...
Raw Superfood Cookies
Yields about 15 medium cookies
9-10 medjool dates, pitted
¼ cup raw almonds
2 tbsp superberry raw Jem sprouted almond butter or almond butter of choice
¼ cup organic sunflower seeds
½ cup unsweetened shredded coconut
3 tbsp chia seeds
2 tbsp hemp hearts
1/2 tbsp maca powder
½ teaspoon lucuma powder
1-2 tbsp water
Optional: extra raw almond butter for topping
1. Food-process all the ingredients in a food processor, adding in 1-2 tbsp water as needed last until mixture sticks together.
2. Roll into balls or flatten into discs with a little dip in the center for additional almond butter if desired.
