Remember when I made that amazing raw cookie dough with kale and spirulina?  No? Well, go back a post!  It is ridiculously good and can be found HERE.

This recipe is Part I of II.  I used these leftovers to create another wonderful creation, which I'll be sharing probably quite soon, as I can't keep my treats just to myself!  This one turned out so good, I want everyone to try it!

 

This luscious treat looks like cookie dough, and can be eaten with a spoon, scooped and licked like an ice cream cone, or used as a protein-packed sweet dip for fruit, or I don't know, crackers.  You can eat this however you please; I prefer chilled from the fridge with a spoon.  I feel like I'm eating ice cream, but I feel like I'm eating superfood.  It's amazing. Yesterday was pretty fabulous as my neighbors watched the babies for me for 30 minutes while I jogged.  I was both esctatic to run and terrified of leaving them alone (with my perfectly capable friends).  But the trial run (pun intended, hehe) went great and I felt both refreshed and energized at the wonderful chance to run, something that has become a rare treat since the babies arrived.  This is a bit cruel, as now that I am finally able to run again (I was banned from running most of my pregnancy due to my high-risk pregnancy), I am now alone with the babies most days and by the time my husband gets home,...

Ahh, the raw cookie dough.  I only recently jumped on the garbanzo bean cookie dough band wagon, and all I can say is what took me so long??  The creamy, filling and protein-packed cookie dough treat has become my new quick "dessert" breakfast.  When you're constantly on your feet washing bottles, walking the babies to sleep, frantically cleaning or making food for the family, easy and filling meals and snacks are a must.

This yields 2-4 servings depending on how hungry you are, but remember that if you eat it all in one go, that is a LOT of beans ;)
