These maple-tinged zucchini brownies are rich and fudgy, and as always, gluten-free and soy-free!  These ones are nut-free too, and with a vegan option.  So go ahead and indulge; you're getting in some veggies but you'll never know it!

My Raw Hawaiian Carrot Cake is made with raw honey from Kuai and Hawaiian Gingerade (yummy ginger yerba mate drink found at my Whole Foods) to add liquid and more of a ginger kick.  You can use any honey (or agave if you are averse to using honey) and water to replace the ginger-ade if necessary.  So, it may be more appropriate to call it Raw Honey Carrot Cake, but either way, it contains veggies and tastes great and if you can find Hawaiian Gingerade near you, I highly recommend it.

This recipe is Part I of II.  I used these leftovers to create another wonderful creation, which I'll be sharing probably quite soon, as I can't keep my treats just to myself!  This one turned out so good, I want everyone to try it!


This luscious treat looks like cookie dough, and can be eaten with a spoon, scooped and licked like an ice cream cone, or used as a protein-packed sweet dip for fruit, or I don't know, crackers.  You can eat this however you please; I prefer chilled from the fridge with a spoon.  I feel like I'm eating ice cream, but I feel like I'm eating superfood.  It's amazing. Ahh, the raw cookie dough.  I only recently jumped on the garbanzo bean cookie dough band wagon, and all I can say is what took me so long??  The creamy, filling and protein-packed cookie dough treat has become my new quick "dessert" breakfast.  When you're constantly on your feet washing bottles, walking the babies to sleep, frantically cleaning or making food for the family, easy and filling meals and snacks are a must.

This yields 2-4 servings depending on how hungry you are, but remember that if you eat it all in one go, that is a LOT of beans ;)

These are based off another fantastic recipe that will make its way up here soon from my old blog...and I can't decide which one is better.  I love the light maple flavor and the creamy top layer texture contrasted with the cookie dough bar below.  I suggest making this when you have company and are not home alone, or somehow, you'll find yourself eating these for breakfast, lunch and dinner.  Not that anyone with two newborn babies alone in a house all day would do that, right??
