These maple-tinged zucchini brownies are rich and fudgy, and as always, gluten-free and soy-free!  These ones are nut-free too, and with a vegan option.  So go ahead and indulge; you're getting in some veggies but you'll never know it!

I created this recipe when my mother and husband both requested a chocolate dessert, yet I wanted to be able to enjoy it too and have it at least a little healthy.  I dug out a soft zucchini that was the epitome of a squash (mostly in texture) and figured it was now or never for the little veg.  Grated and blended into this chia and maple-infused chocolatey treat, the...

What is a brookie, you ask?  Why it is the best of both dessert worlds; a brownie and a cookie in one fabulous square.  (Or slice, or however you choose to bake it).  See my original brookie recipe HERE on my old blog.

When I first developed this recipe I was OBSESSED and I'm quite sure I delayed my postpartum weight loss a little by having it for breakfast, snack and dessert until I decided to space it out a little.  Okay I'm joking, but still, I'm proud of myself for not eating this all day, every day.  Luckily though, they are pretty healthy and super filling, and not to mention gluten-free, veg...

My Raw Hawaiian Carrot Cake is made with raw honey from Kuai and Hawaiian Gingerade (yummy ginger yerba mate drink found at my Whole Foods) to add liquid and more of a ginger kick.  You can use any honey (or agave if you are averse to using honey) and water to replace the ginger-ade if necessary.  So, it may be more appropriate to call it Raw Honey Carrot Cake, but either way, it contains veggies and tastes great and if you can find Hawaiian Gingerade near you, I highly recommend it.

I garnished my cake squares with cinnamon, though a more decadent option would be to whip...

Remember when I made that amazing raw cookie dough with kale and spirulina?  No? Well, go back a post!  It is ridiculously good and can be found HERE.

Also, did you know it can be used as a thick, tantalizing frosting?  Well, clearly it can.  And thus, the layer cake full of the vegan protein goodness of Chocolate Coated Mint Squarebars was born.  Oh, and by the way you can enter "rungirl" at checkout to receive 20% off at Squarebar.com, just for being my blog reader.  I am not paid by them in any way, though I would happily be paid in Squarebars (hint hint).  Nope, I'm just content indulgin...

This recipe is Part I of II.  I used these leftovers to create another wonderful creation, which I'll be sharing probably quite soon, as I can't keep my treats just to myself!  This one turned out so good, I want everyone to try it!

This luscious treat looks like cookie dough, and can be eaten with a spoon, scooped and licked like an ice cream cone, or used as a protein-packed sweet dip for fruit, or I don't know, crackers.  You can eat this however you please; I prefer chilled from the fridge with a spoon.  I feel like I'm eating ice cream, but I feel like I'm eating superfood.  It's amazing. And...

Ahh, the raw cookie dough.  I only recently jumped on the garbanzo bean cookie dough band wagon, and all I can say is what took me so long??  The creamy, filling and protein-packed cookie dough treat has become my new quick "dessert" breakfast.  When you're constantly on your feet washing bottles, walking the babies to sleep, frantically cleaning or making food for the family, easy and filling meals and snacks are a must.

This yields 2-4 servings depending on how hungry you are, but remember that if you eat it all in one go, that is a LOT of beans ;)

These are based off another fantastic recipe that will make its way up here soon from my old blog...and I can't decide which one is better.  I love the light maple flavor and the creamy top layer texture contrasted with the cookie dough bar below.  I suggest making this when you have company and are not home alone, or somehow, you'll find yourself eating these for breakfast, lunch and dinner.  Not that anyone with two newborn babies alone in a house all day would do that, right??

Luckily for me I had help devouring these, and from three people who are decidely NOT vegan or gluten-free, yet they love...

During one of my usual 3am scrolls through the wonderful world of Instagram, I came across a healthy pancake party challenge.  Since I'm a sucker for any contest and I love healthy pancakes, I was hooked.  My other fantastic recipe for spinach pancakes will be up here soon, but in the meantime enjoy the berry (ha) delicious recipe I created for my superfood berry pancakes.

Let me back up though; these were created after a wonderful hike with my friend Kelli through Palo Corona park (I sadly watched the Treadmill runners scamper up Inspiration Point, but that day will come soon for me, I'm sure).  I...

Ok friends.  This one will change your life.  Have you ever had a chocolate craving but realized you had none in the house?  Or, craved chocolate but didn't want to indulge in a sugary candy that will make you crash?  Well I have the easy solution for you, that takes about 2 minutes plus setting or freezing time, and it only contains 3 easy, healthy ingredients that you won't feel bad about.

In minutes you'll have a simple chocolate bar or chips, and you'll never need to buy chocolate chips again!  Plus they taste way better than store bought, which I've found to be true of most homemade items.

Though I often invent my recipes on the fly, I must admit to finding a quinoa brownie recipe on Pinterest and then tinkering until I developed my own cleaner, healthier version of several recipes I found online.

I love treats, and this quinoa brownie recipe satisfies my dessert cravings as well as my hunger. Seriously, I ate some the other afternoon and c...
